Vegetable and Glass Noodle Soup with Tuna Balls
My daughter requested for soup tonight . I didn’t go to the market today so i used ingredients in my pantry and use some veggies in the fridge.
1 Mega Prime tuna flakes hot and spicy 155g
1 tbsp minced onion
1 tsp Green onion
2 Tbsp flour
pinch of garlic powder
2 tbsp olive oil
1 medium onion , diced
2 cloves garlic
1/2 cup celery , diced
1/2 cup carrot diced
1/2 tbsp flour
2 1/2 cup chicken broth
1/2 can Mega Prime whole kernel corn
8 pcs Mega Prime whole mushroom , halved
1/2 cup milk
1 bundle mega prime vermicelli
salt and pepper to taste
handful spinach ,
red pepper flakes
In a bowl, add all the ingredients for the tuna. Mix until all combined. Shape them into balls. I made small sizes and had 8 balls . Cover and Keep in the fridge while you prepare for the soup. You can make this ahead of time.
Heat oil in a pot. Add onion and garlic then add carrot and celery. Stir in flour and pour the broth. Bring to boil and simmer until vegetables are tender.
Add corn , mushroom and tuna balls. Simmer 10-15 minutes. Add milk , Salt and pepper to taste .Then add vermicelli simmer for few minutes before adding spinach. Serve immediately top with green onions or red pepper flakes.
