3 SurpreSARAP Vegetable Recipes Pinoy Dishes

Regular servings of vegetables are important in ensuring that you and your family’s health is at its best. So, in eating and in putting meal plans together, don’t forget about your greens. But don’t just think of vegetable dishes, choose surpreSARAP! For this week’s meal plan, these vegetable recipes pinoy cravings should help you get started.

Must-Try Vermicelli & Vegetable Recipes Pinoy Dishes

Think ‘delicious and healthy’ may sound too good to be true especially with greens? The following vegetable recipes pinoy faves will surprise you! 

Chopsuey

Loosely translating to “leftovers”, chopsuey is a 15-minute dish that you can prepare with greens and ingredients that you have stock of. For this recipe, we’re doing away with the leftover concept and presenting a surpreSARAP way to have this well-loved dish.

INGREDIENTS

Makes 3 servings

for pork

for sauce

  • ¾ cup chicken stock (can be diluted broth cube)
  • 1 Tbsp. Mega Prime Oyster Sauce
  • 2 tsp. potato starch
  • ¼ tsp. ground pepper
  • ¼ tsp. salt
  • 1 tsp. sesame oil

for stir-fry

  • 1 Tbsp. oil
  • 2 medium-sized garlic cloves, minced
  • ¼ inch coin ginger, peeled and minced
  • ½ small onion, sliced
  • ½ carrot, julienned
  • ½ red bell pepper, julienned
  • 2 cabbage leaves (or about 140g), chopped
  • 10 snap peas (chicharo), trimmed and sliced
  • 1 ½ packs (250g) Mega Prime Choices Vermicelli
DIRECTIONS
  1. Cook Mega Prime Choices Vermicelli by soaking in hot water for 5-7 minutes. Drain and set aside.
  2. For the pork, combine pork strips with Mega Prime Oyster Sauce, potato starch and mirin (if using) in a bowl. Make sure to stir thoroughly. 
  3. For the sauce, mix chicken stock, Mega Prime Oyster Sauce, potato starch, pepper, salt and sesame oil in a small bowl. As with the previous step, make sure to stir until well-combined. 
  4. Set a large frying pan over high heat. Fry garlic and ginger for about 20 seconds, before adding in celetery, onion, carrots and bell peppers. Stir-fry until onions soften and start to appear translucent.
  5. Pull vegetables to the edges of the pan, making space in the center for the marinated pork. Press pork strips into a flat layer and cook until it’s brown on the side that’s faced down. Once pork is almost cooked through, you may now stir-fry the vegetables with the meat. 
  6. Throw in chopped cabbage leaves and snap peas (chicharo). Cook until snap peas turn bright green.
  7. Grab the bowl of sauce. Give it a stir before adding to the stir-fry pan. Let it boil until the sauce thickens. Season with salt and pepper, as preferred. Mix in cooked Mega Prime Choices Vermicelli and transfer to a serving bowl.

Guisadong Upo

Not only is it easy to prepare and budget-friendly, Guisadong Upo is flexible. You can have it as a soup or a stir-fry with rice or noodles! Craving for something simple yet packed with flavor and texture? Give this vegetable recipes pinoy dish made surpreSARAP with vermicelli a try.

INGREDIENTS

Makes 4 servings

  • 2 Tbsp. cooking oil 
  • 250g shrimp, peeled and deveined
  • 100g Mega Prime Choices Vermicelli
  • 1 large bottle gourd (upo), peeled and cut into bite-sized pieces
  • 6 cloves garlic, minced
  • 2 medium tomato, chopped
  • 4 cups chicken or beef broth
  • ½ tsp. ground black pepper
  • 2 Tbsp. fish sauce
  • Salt, to taste
DIRECTIONS
  1. Soak Mega Prime Choices Vermicelli in hot water for 5-7 minutes. Drain and set aside.
  2. Set a deep pot over medium heat. Pour in cooking oil. Saute garlic, onion and tomato until caramelized. 
  3. Cook shrimp until each piece turns pinkish. 
  4. Pour chicken or beef broth in and bring to a boil. Once it starts boiling, reduce heat to low. Add in cooked noodles, and simmer for 5 minutes. 
  5. Season with salt and pepper, if preferred. Transfer guisadong upo into a serving bowl and serve while hot.

Lumpiang Togue

A party staple, but make it healthy. That’s what Lumpiang Togue is about. It’s a healthier version of classic lumpiang shanghai as it has greens such as cabbage, green beans, carrots and mung beans (togue) in its filling. For this vegetable recipes pinoy fave though, we’re adding a little more bite by adding Mega Prime Choices Vermicelli. Here’s a quick step-by-step. 

INGREDIENTS

Makes 15 servings

  • 2 Tbsp. oil
  • 1 onion, minced
  • 5 cloves garlic, minced
  • 1 pc. chicken broth cube
  • 1 carrot, julienned
  • 1 cup green beans, cut into strips
  • 5 cups mung bean sprouts (togue)
  • 2 cups cabbage, chopped
  • ¼ kg ground chicken (or pork)
  • 1 tsp. ground black pepper
  • 1 Tbsp. Mega Prime Oyster Sauce
  • ½ pack (45g) Mega Prime Choices Vermicelli 
  • 15 pcs. lumpia wrapper
DIRECTIONS
  1. Soak Mega Prime Choices Vermicelli in hot water for 5-7 minutes. Drain and set aside.
  2. Heat oil in a pan and saute onions and garlic until translucent and light brown. Add in ground meat and continue sauteing. Season with pepper, if needed.
  3. Stir in chicken broth cubes, Mega Prime Oyster Sauce and fish sauce. After a few minutes, add in carrots and green beans. Give it a few more stirs before covering the pan. Simmer until vegetables are tender. 
  4. Throw in mung bean sprouts (togue) and cabbage. Toss lightly until ingredients are well-combined. Season with salt, if needed. Simmer for a few minutes.
  5. Strain vegetable filling to remove excess liquid. Set aside to cool. 
  6. Wrap spoonfuls of vegetable filling with lumpia wrapper. Make sure that the sides are closed. 
  7. Fry lumpiang togue (in batches) until golden brown. Transfer cooked lumpia into a strainer or a plate with a paper towel. 
  8. Serve with Mega Prime Choices Sweet Chili Sauce.
