Creamy Tuscan Chicken
Ingredients
- 1 tbsp. extra-virgin olive oil
- 4 boneless skinless chicken breasts
- Kosher salt
- Freshly ground black pepper
- 1 tsp. dried oregano
- 3 tbsp. butter
- 3 cloves garlic, minced
- 1 1/2 c. cherry tomatoes, halved
- 3 c. baby spinach
- 150g Mega Prime Whole Mushroom (198g), halved
- 1/2 c. heavy cream
- 1/4 c. freshly grated Parmesan
- Lemon wedges, for serving
Directions
- In a skillet over medium heat, heat oil. Add chicken and season with salt, pepper, and oregano. Cook until golden and no longer pink, 8 minutes per side. Remove from the skillet and set aside.
- In the same skillet over medium heat, melt butter. Stir in garlic and cook until fragrant, about 1 minute. Add cherry tomatoes and mushroom season with salt and pepper. Cook until tomatoes are beginning to burst then add spinach and cook until spinach is beginning to wilt.
- Stir in heavy cream and parmesan and bring mixture to a simmer. Reduce heat to low and simmer until sauce is slightly reduced, about 3 minutes. Return chicken to skillet and cook until heated through, 5 to 7 minutes.
- Serve with lemon wedges.
Honey Glazed Salmon
Ingredients
- 1/3 c. honey
- 1/4 c. low-sodium soy sauce
- 2 tbsp. lemon juice
- 1 tsp. red pepper flakes
- 3 tbsp. extra-virgin olive oil, divided
- 4 pieces of 113g salmon filets, patted dry with a paper towel
- Kosher salt
- Freshly ground black pepper
- 100g Mega Prime Green Peas (155g), mashed/puree
- 3 cloves garlic, minced
- 1 lemon, sliced into rounds
Directions
- In a medium bowl, whisk together honey, soy sauce, lemon juice and red pepper flakes.
- In a different bowl, mash peas or use a food processor to lessen prep time.
- In a separate pan, cook mashed peas and season with some salt and pepper.
- In a large skillet over medium-high heat, heat two tablespoons of oil. When oil is hot but not smoking, add salmon skin-side up and season with salt and pepper. Cook salmon until deeply golden, about 6 minutes, then flip over and add remaining tablespoon of oil.
- Add garlic to the skillet and cook until fragrant, 1 minute. Add the honey mixture and sliced lemons and cook until sauce is reduced by about 1/3. Baste salmon with the sauce.
- Garnish with mashed peas and sliced lemon and serve.
Filet Mignon
Ingredients
- 2 tbsp. extra-virgin olive oil
- 4 pieces of 113g filet mignon
- 100g of Mega Prime Whole Mushroom (198g)
- Kosher salt
- Freshly ground black pepper
- 4 tbsp. butter
- 1 tbsp. roughly chopped rosemary
Directions
- Preheat the oven to 400°. In a large skillet over medium-high heat, heat oil. Season steak with salt and pepper on both sides. When oil is just about to smoke, add steak. Cook until very seared, about 5 minutes, then flip and add butter, mushrooms and rosemary. Baste with butter and cook for another 3 to 5 minutes.
- Transfer skillet to oven and cook until cooked to your liking, about 5 minutes for medium. Pro tip: Check the temperature of your meat before transferring to the oven to see how far you are from the desired temperature. If you are within 10 degrees, you may need even less time. If your steak isn’t done after 5 minutes, check every couple of minutes so you don’t risk over cooking.
- Remove from pan and let rest 5 minutes before slicing.
