Quick Meatless Recipes for Lent Using Oyster Sauce

Going meat-free during Lent doesn’t mean you have to eat the same old veggie meal every time. We say you don’t have to sacrifice deliciousness for Lent! These oyster sauce-infused recipes are perfect for those who are looking to spruce up their menu for Lent.

 

Mixed Mushrooms and Asparagus Rice Bowl

Missing meat? Use mushrooms as your substitute! This is a healthy, rich and filling meal that can be prepared in 10 minutes—perfect for the season of Lent.

Ingredients:

  • 1 scallion, chopped
  • 1 garlic clove, chopped
  • ½ ginger, peeled, chopped
  • 1 teaspoon vegetable oil
  • 1 can Mega Prime Quality: Mushrooms (Pieces & Stems), drained
  • 3 asparagus sticks, chopped into 1-inch pieces
  • 1 siling labuyo, sliced
  • ½ cup Mega Prime Choices: Oyster Sauce
  • 1 cup cooked rice

Directions:

  1. Sauté scallions, garlic and ginger in vegetable oil for 2 minutes. Add Mega Prime mushrooms, asparagus and siling labuyo and sauté until tender. Mix in Mega Prime Oyster Sauce and cook for a minute more. Set aside.
  2. Prepare the cup of cooked rice in a bowl and place the sautéed ingredients on top. Serve and enjoy!

 

 

Vegetarian Mapo Doufu

Mapo Doufu is a dish that originated from the Sichuan province of China. Traditionally, it consists of tofu in a spicy sauce along with minced beef. However, you may choose to not include any meat at all or substitute them with mushrooms.

Ingredients:

  • 1 box tofu, cut into small cubes
  • 2 tablespoons vegetable oil
  • 2 teaspoons garlic, minced
  • 1 teaspoon ginger, minced
  • 1 can Mega Prime Quality: Mushrooms (Pieces & Stems), drained
  • 2 tablespoons Mega Prime Choices: Oyster Sauce
  • 2 tablespoons chili bean sauce
  • 3 tablespoons water
  • Cornstarch water as needed
  • 1 tablespoon sesame oil
  • 1 tablespoon green onions, minced

Directions:

  1. Soak tofu cubes into a container filled with salted water. Leave for about 15 minutes, then drain. Set aside.
  2. Under medium heat in a non-stick stir-fry pan, sauté garlic and ginger with vegetable oil until fragrant. Add Mega Prime Mushrooms and stir-fry until cooked.
  3. Stir in Mega Prime Oyster Sauce and chili bean sauce. Add water and simmer for 3 minutes. Stir gently from time to time to avoid breaking the tofu cubes.
  4. Add tofu and continue simmering over low heat until the tofu absorbs the flavor. Add cornstarch water and stir to thicken sauce. Sprinkle with sesame oil and garnish with green onions. Serve and enjoy!
