Chicken & Mushroom Pasta
Complex recipes don’t always deliver on taste and the after giddy-feels that you and dear ones should be getting on a dinner that’s supposed to be the most celebratory every year. Make it to your Christmas potluck with this 30-minute protein and calcium-packed pasta recipe.
INGREDIENTS
Serving Size: 4
- 2 tbsp. olive oil
- 2 tbsp. garlic, crushed
- 200g skinned chicken, thigh fillet, cut into strips
- ½ cup Mega Prime Mushrooms, sliced into two
- ⅓ cup basil, torn
- 250g tomato or spaghetti sauce
- 1 pack (175g) spaghetti noodles, cooked
- ½ cup parmesan cheese, grated
DIRECTIONS
- Heat olive oil. Sauté garlic, chicken, and mushrooms for 5 minutes.
- Add tomato or spaghetti sauce. Over low heat, let it simmer for 5 minutes.
- Add basil to the sauce before pouring over pasta. Serve with parmesan cheese.
Braised Chicken in Oyster Sauce
The best thing about Chinese dishes is that they’re usually bursting with flavors and textures. This recipe for Braised Chicken in Oyster Sauce, for one, is saucy, fragrant and savory — perfect for a festive feast for any time of year.
INGREDIENTS
Serving Size: 3-4
- 3pcs. chicken legs, chopped into 3-4 parts
- ½ tbsp. light soy sauce
- ½ tsp pepper
- 1 inch ginger knob
- 3 garlic cloves
- 3 stalks spring onion
- 3 dried scallops
- 2 tbsp. sesame oil
- ½ tbsp. Chinese wine
For the Sauce
- 1 ½ cups water
- 1 tsp. chicken seasoning powder
- ½ tbsp. Mega Prime Oyster Sauce
- 2 tsp. light soy sauce
- ½ tsp. thick dark soy sauce
- 2 tsp. sugar
- pinch salt
- 1 – 2 tsp. corn flour, mixed in 1 tbsp. water
DIRECTIONS
- Season chicken with light soy sauce and pepper, and set aside for 30 minutes.
- Peel and slice ginger knob and garlic cloves. Cut the white part of spring onions into 1-inch lengths while chopping the green part. Soften scallops in warm water for 10 minutes. Drain, but save the soaking water. Shred the scallops finely.
- Combine the sauce ingredients.
- Over high heat, stir fry the ginger, garlic and the white parts of the spring onion. Add shredded scallops, and cook for 1-2 minutes. Add chicken chunks and toss until the color changes. Drizzle Chinese wine and stir fry until well combined.
- Transfer to a saucepan or cooking pot. Pour the combined sauce ingredients and the scallop’s soaking water, and bring to a boil.
- Once boiling, cover the pot, reduce to low heat, and let the mixture braise for about 30 minutes or until chicken chunks are evenly cooked and tender.
- Season sauce to taste and thicken with cornflour mixture.
- Garnish with chopped spring onions before serving.
Beef Ampalaya with Sotanghon Recipe
No matter how simple, a dish that’s whole-heartedly cooked and flavored can always be a way of showing your love and appreciation for your loved ones. This Christmas Eve, serve a festive Filipino alternative to the usual pasta dishes with Beef Ampalaya with Sotanghon.
INGREDIENTS
Serving Size 6
- 1 ½ cups water
- ¼ tsp. salt
- ¼ kg ampalaya, seeded and sliced thinly
- 2 tbsp. oil
- 2 tbsp. garlic, crushed
- ¼ cup onion, sliced
- 150g sirloin beef, cut into strips
- 1 pc. beef bouillon cube
- 200g tomato sauce
- 1 tsp. sugar, white
- ½ tsp. salt
- 2 ½ cups water
- 50g sotanghon, cut into short strands
Preparation
- Soak ampalaya in water with salt. After 10 minutes, rinse, drain and squeeze.
- Sauté garlic, onion, and beef. Then add bouillon cube, tomato sauce, sugar, salt, and water for boiling. Cover the mixture and and simmer for 10 minutes.
- Add sotanghon and cook for 2 minutes. Throw in ampalaya and cook for another 3 minutes or until tender.
