3 Simple Ulam Ideas to Enjoy Corn with the Family

Corn is the perfect accompaniment for any meal—and we’re not just talking about your mom’s famous black bean and corn chowder or your dad’s cheese enchiladas. Corn as a whole has a number of health benefits, but we’re focusing here on one in particular: corn is chock-full of fiber. And fiber is essential for a healthy diet because it helps you feel full longer, which means you’ll be less likely to overeat and gain weight. Here we’ve listed corn ulam ideas for your family to enjoy! 

Sweet Corn & Salsa Verde Soup

This soup is delicious, but it also helps you to stay warm during the winter months. It’s an ulam idea that balances your diet with a good amount of vegetables as well!

Ingredients

  • 1 diced white onion
  • 1/4 cup chopped green onions/scallions
  • 1 cup of diced celery
  • 1 cup of chopped leek
  • 2 cloves of minced garlic
  • red pepper flakes
  • salt & pepper
  • 3 peeled and diced potatoes
  • 1 cup of Mega Prime Whole Kernel Corn (180g)
  • fresh cilantro (save some to top)
  • 1/2 cup of salsa verde
  • 4 cups of broth (chicken or vegetable)
  • 1 cup of half and half or plant-based milk
  • cherry tomatoes
  • sliced radishes
  • avocado

Directions

  • In a dutch oven or large pot, sauté onion, green onion, celery, leek, and garlic. Add in salt, pepper, and red pepper flakes.
  • Add in potatoes and corn and sauté another 5 minutes.
  • Stir in the fresh cilantro and the salsa verde. Pour in the chicken broth. it should be enough to cover all the veggies.
  • Cover and simmer for 30 minutes until potatoes are soft.
  • Use an immersion blender to blend half the soup. Make sure to not blend the entire pot. You can also add half the soup to a blender, blend it, and add it back to the soup.
  • Slowly stir in the milk or half and half.
  • Serve and garnish with diced cherry tomatoes, radishes and fresh cilantro.

Corn and Bacon Casserole

A classic comfort dish that everyone can get behind—especially with bacon on top. The perfect accompaniment to a game day dinner or just a lazy Sunday afternoon. This ulam idea tastes amazing on its own, but it’s so good that you won’t even notice how filling it is!

Ingredients

  • 6 bacon strips
  • 1/2 cup chopped onion
  • 2 tablespoons all-purpose flour
  • 2 garlic cloves, minced
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 cup sour cream
  • 3-1/2 cups Mega Prime Whole Kernel Corn (425g)
  • 1 tablespoon chopped fresh parsley
  • 1 tablespoon minced chives

Directions

  • In a large skillet, cook bacon until crisp. Drain, reserving 2 tablespoons of drippings. Crumble bacon; set aside.
  • Saute onion in drippings until tender. Add flour, garlic, salt and pepper. Cook and stir until bubbly; cook and stir 1 minute more. Remove from heat and stir in sour cream until smooth. Add corn, parsley and half of the bacon; mix well.
  • Pour into a 1-qt. baking dish. Sprinkle it with remaining bacon. Bake, uncovered, at 350° for 20-25 minutes or until heated through. Sprinkle with chives.

Sweet Corn and Potato Gratin

A hearty side dish that will warm you up on any fall or winter day, when everything else seems too cold and gray. This ulam idea goes great with just about anything and is very easy to make.

Ingredients

  • 1 medium onion, thinly sliced
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 2 garlic cloves, minced
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 cup whole milk
  • 2 pounds medium Yukon Gold potatoes, peeled and cut into 1/8-inch slices
  • 2 cups Mega Prime Whole Kernel Corn (425g)
  • 1 can (8-1/4 ounces) Mega Prime Cream Corn (425g)
  • 3/4 cup panko bread crumbs
  • 1 tablespoon butter, melted

Directions

  • Preheat the oven to 350°. In a large saucepan, saute onion in butter until tender. Stir in flour, garlic, salt and pepper until blended; gradually add milk. Stir in potatoes. Bring to a boil. Reduce heat; cook and stir until potatoes are crisp-tender, 8-10 minutes.
  • Stir in corn and cream-style corn. Transfer to an 8-in. square baking dish coated with cooking spray.
  • In a small bowl, combine bread crumbs and butter; sprinkle over potatoes. Bake until golden brown and potatoes are tender, 45-50 minutes. Let it rest for 10 minutes before serving.
