One-Pot Pinoy Style Picadillo

Ingredients:

  • 4 tablespoons olive oil
  • 1 yellow onion, minced
  • 4 cloves garlic, minced
  • 1 lb. ground pork
  • 1 cup pork broth
  • 2 potatoes, cubed
  • 2 carrots, cubed
  • 1 can Mega Prime Green Peas (155g), drained
  • Fish sauce
  • Freshly ground black pepper

Directions:

  1. In a big pot over medium-high, heat olive oil. Saute onion and garlic until fragrant then fry ground pork until it turns light brown.
  2. Add pork broth, potatoes, carrots and Mega Prime Green Peas. Stir, cook and cover for 10 minutes.
  3. Season with fish sauce and crushed black pepper, according to preference. Serve and enjoy!

Two-Step Open-Faced Peas and Tomatoes Sandwich

Ingredients:

  • 1 can Mega Prime Green Peas (155g), drained
  • 1 clove garlic
  • ½ cup Parmesan (or any available cheese), grated
  • ¼ cup unsalted cashew nuts (optional)
  • 2 teaspoons lemon juice
  • 1 teaspoon salt, plus extra for seasoning
  • ¼ teaspoon freshly ground black pepper, plus extra for seasoning
  • â…“ cup olive oil
  • 2 slices of white bread
  • 4 cherry tomatoes (or small tomatoes), sliced
  • 2 cups white cheddar, shredded

Directions:

  1. In a food processor, pulse together Mega Prime Green Peas, garlic, cheese, cashew nuts, lemon juice, salt and pepper. Then with the food processor running, slowly add olive oil until homogeneous. Season with salt and pepper, if needed. Transfer to a small bowl and set aside.
  2. Preheat oven to broil. Cut the white bread into ½ pieces, spread the pea pesto, add sliced tomatoes and top with shredded cheddar. Place sandwiches on an oven-safe baking tray and put in the oven under broil for about 3 minutes or until cheese is melted. Serve and enjoy!

No-Fuss Pea Soup

Ingredients:

  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 1 celery stalk, chopped
  • 2 cloves garlic, chopped
  • 1 teaspoon parsley, chopped
  • 5 cans Mega Prime Green Peas (155g), drained
  • ½ cup water
  • 4 cups chicken broth
  • Salt
  • Freshly ground black pepper

Directions:

  1. In a deep pot over medium heat, heat butter and olive oil until butter is melted. Add onion and celery and stir occasionally for about 5 minutes until softened. Add garlic and parsley and stir until fragrant.
  2. Add in Mega Prime Green Peas, water and chicken broth. Bring to a simmer over high heat and cook until very tender.
  3. In a blender or food processor, puree soup in batches until smooth. Add salt and pepper to taste. Serve in a soup bowl and enjoy!
