3 Easy-to-cook ulam recipes

We’re here to share 3 easy-to-cook ulam recipes that can be done by moms wherever and whenever. For moms who don’t have enough time to prepare due to their busy schedule, these recipes are surely simple yet hearty for anyone who tries them. 

The Ultimate Tuna Melt Sandwich

Want to prepare a quick and easy meal? Then this recipe is for you! It only takes 15 minutes to prepare this delicious  yet healthy dish that yields 8 servings. It’s a combination of flavorful tuna, slices of cheddar cheese, freshly sliced tomatoes that melt inside a crisp golden bread sandwich that literally melts in your mouth. Below is the easy-to-cook ulam recipe: 

INGREDIENTS

Serves 8

  • 4 cans Mega Tuna Flakes in Oil (180g), drained
  • 1/4 cup mayonnaise
  • 1/4 cup celery finely chopped
  • 1/4 cup red onion finely chopped
  • 1 Tablespoon dijon mustard
  • 2 Tablespoons parsley chopped
  • salt and pepper
  • 8 slices bread I used French bread
  • 16 slices cheddar cheese more if you want a layer on the bottom 
  • tomato sliced
  • 1/4 cup butter softened

INSTRUCTIONS

  • In a medium sized bowl combine the tuna, mayonnaise, celery, red onion, dijon mustard, parsley, salt and pepper.
  • Butter each slice of bread. Put the butter side down and add the cheese on the unbuttered side. Add the tuna mixture on top. Top with tomato and additional cheese.

SKILLET METHOD

  • Preheat a skillet to medium heat. Add the sandwich on the skillet and heat for about 2-3 minutes until the cheese starts to melt and turns  golden brown. Flip to the other side and cook until the cheese is fully melted and the sandwich is golden brown.

BROILER METHOD

  • Preheat a broiler. Spread the bread butter side up and toast for a couple of minutes. Top with cheese, tuna mixture and Broil for 2-3 minutes until the cheese is melted.

Spicy Sardines in Tomato Sauce

This next easy-to-cook ulam recipe is good to pair with rice. It only takes 10 minutes to prepare this flavorful yet very simple dish. Sardines have always been a staple in Filipino homes. Even though this dish is easy-t- cook, it does not mean that it falls short on pagiging masarap for the family.  

INGREDIENTS

Serves 4

  • 2 Cans of Mega Sardines Tomato Sauce or you may opt for Mega Sardines in Tomato Sauce with Chili (425g) (for extra spice)
  • 2 Tbsp cooking oil
  • 1 onions thinly sliced
  • 2 roma tomatoes diced
  • 2 red Thai chili peppers optional, chopped
  • Salt and pepper to taste

Garnish:

  • 1 stalk green onion finely chopped

INSTRUCTIONS

  • Preheat a skillet/wok with cooking oil. Saute the onions until they are soft. Add the tomatoes and chili (if using) and continue to cook until the tomatoes are soft
  • Add in the sardines, be careful not to stir too much and break the fish into pieces. Season with more salt to your taste if needed. Bring to a gentle simmer and then turn off the heat
  • Sprinkle it with  chopped green onion and voila…dinner is ready!

Vegetarian Carbonara

Can’t find recipes that are vegetarian-friendly? then this easy-to-cook ulam recipe is for you or your loved ones! Carbonara has become the staple when it comes to pasta, it is both the easiest and most loved. You can easily add your own twist to the recipe once you’ve mastered it or want to try something new. 

INGREDIENTS

  • 1 pound spaghetti noodles
  • ½ cup smoked mozzarella cheese
  • ½ cup grated Parmesan cheese, plus more for serving
  • 4 egg yolks
  • 1 cup frozen Mega Prime Green Peas (155g)
  • 8 cups Earthbound Farm Organic spinach
  • 3 tablespoons butter
  • Kosher Salt
  • Fresh ground black pepper

INSTRUCTIONS

  • In a large pot, combine 6 quarts of water with 2 tablespoons of kosher salt and bring it to a boil.
  • Grate the Parmesan and mozzarella cheese. Carefully separate four egg yolks and set aside.
  • Once boiling, add the pasta and cook until the pasta is just about al dente, about 7 minutes; then add peas and spinach and cook for 1 minute. Reserve 1 cup cooking water, and then drain the pasta and vegetables.
  • In a skillet, melt the butter, then stir in the cheeses, ¼ cup pasta water, and ¼ teaspoon kosher salt. Stir in the pasta and vegetables until creamy over low heat, add more pasta water if necessary (note that the mozzarella will stick together in some places).
  • To serve, top each pasta serving with a whole egg yolk and additional Parmesan cheese, and stir the yolk into the pasta at the table (if you are uncomfortable serving egg yolks at the table, stir the egg yolks into the pasta in the skillet to heat them through). Serve immediately. (Note that the mozzarella cheese can become gummy the longer the pasta sits, so eat immediately if possible. Leftovers can be reheated in a skillet, but may not have the same creamy texture.)

NOTES

Consuming undercooked eggs may increase your risk of foodborne illness. If you are uncomfortable serving egg yolks at the table, you can stir the egg yolks into the pasta in the skillet to heat them through.

The smoked mozzarella in this recipe is reminiscent of the bacon traditionally used in carbonara; if you can’t find it, use traditional mozzarella or substitute Parmesan (using 1 cup Parmesan total).
